<h1>The chemistry of vinegar and citrus</h1>

<p>I keep two simple things in my kit that most folks already have at home: white vinegar and a lemon. They are not magic. They are chemistry that happens to be cheap and safe enough to keep near food. Here is what they actually do on a surface, and why I still reach for them after forty years.</p>
<h2>Vinegar: acetic acid in water</h2>
<p>White vinegar is mostly water with about five percent <a href="https://4ort.xyz/entity/acetic-acid">acetic acid</a>. The acid is the worker. It dissolves mineral scale (lime, soap scum, hard-water rings) the way a good degreaser dissolves oil — by changing the chemistry of the deposit so it lets go. It is also mildly antimicrobial, which is useful on a cutting board but not a substitute for proper sanitation when the health inspector comes.</p>
<p class="pull">Vinegar will not cut cooked-on grease by itself. That is soaps job. Vinegar finishes what soap starts.</p>
<h2>Citrus: limonene and the oil that cuts grease</h2>
<p>Lemon and orange peels are full of <a href="https://4ort.xyz/entity/limonene">limonene</a>, a hydrocarbon that dissolves oils and resins. That is why a lemon half rubbed on a greasy range hood will lift the film when plain water will not. The oil is a solvent, not a surfactant. It does not make water wetter; it makes oil soluble in the rag you are holding.</p>

<h2>Surfactants: the missing piece</h2>
<p>Neither vinegar nor citrus alone will wash a greasy plate. That is because grease and water do not mix. A <a href="https://4ort.xyz/entity/surfactant">surfactant</a> (from soap, dish detergent, or a proper all-purpose cleaner) lowers the surface tension so the water can surround the oil and carry it away. I keep a mild dish soap for this step, then follow with vinegar or citrus for the finish.</p>

<h2>What I will not mix</h2>
<p>Vinegar and bleach make chlorine gas. I keep them on opposite sides of the car. Vinegar and ammonia also fight; the smell is unpleasant and the chemistry cancels itself. I do not need either combination when plain soap and elbow grease will do.</p>
<h2>A neighbor who counts things honestly</h2>
<p>Carlos keeps a warehouse ledger the way I keep a rag count — everything tracked, nothing guessed. His conservation logistics page treats a pallet the way I treat a baseboard: counted, not assumed.
