Every autumn morning before the bell, my kitchen fills with the smell of fermentation. Like the Wasatch turning gold, each loaf teaches patience. High expectations meet real warmth.

+ 500g bread flour • 350g water (75% hydration) • 100g active starter • 10g salt
+ Autolyse 30 min, mix, bulk 4h with folds every hour, shape, cold proof 12–16h. Bake 475°F in Dutch oven 20 min covered, 20 uncovered. +

Who holds the bell

I teach in American Fork, under the Wasatch. Mornings start with a starter jar and a lesson plan; evenings sometimes end on a community-theater stage or a youth-soccer sideline. The foothills change color on a schedule more honest than any pacing guide, which is why I use them as a metaphor and not as decoration.

Novice teachers I mentor get the same speech I give a restless class: name the mission, shed what can wait, protect the landing. That is not a slogan I invented for the internet. It is how a classroom stays a community instead of a pile of worksheets.
