Preparation
- Gather all necessary equipment: canning pots, lids, jars, bands, and a pressure canner.
- Wash and sanitize all equipment thoroughly.
- Prepare the produce by washing, peeling, and cutting as needed.
Processing
- Pack the jars with the prepared produce, leaving 1 inch of headspace.
- Wipe the rims of the jars and lids clean.
- Apply jar bands or use a lid and band combination.
- Place the jars in the pressure canner and add water according to the manufacturer's instructions.
- Bring the water to a boil and process the jars according to the time and pressure recommended for the type of produce being canned.
Storage
- Allow the jars to cool completely before removing them from the canner.
- Store the processed jars in a cool, dark place until ready to use.
