I teach middle school and run the high school bench in a town full of military families — kids who move mid-season, whose parents deploy, who show up to practice carrying more than a gym bag. My job is the same whether it's a dry-erase board, a three-man weave, or a whole packer brisket: set the fire low and steady, and get out of the way while the process works.

+

You'll find no recipes for shortcuts here. Everything I put up is the long version — the one that respects time, heat, and a kid's own pace. Pull up a chair.

Trust the Process

+

A short film — fifty-five seconds — about why the same clock runs over a brisket and a basketball game. Four quarters, each its own fire; and a bark that's just patience with a crust on it.

+

One craft, two kitchens. I shot it as a slow warm painting of smoke and low light, because that's how the hours actually feel at 2 a.m. tending the fire.

The whole companion piece — the rub as a ratio, not a rule. Three blends, exact grams, the failure modes, and the two hours you should keep your hands off the meat while the salt does its work. Same philosophy as coaching defense: don't overhelp.

Introduction

+

Welcome to my Brisket Rub Field Guide! As a middle school teacher and high school basketball coach in Killeen, Texas, I've spent countless weekends perfecting the art of brisket. +

In this guide, you'll find a variety of rub recipes, from classic Texas-style to more adventurous flavors. Each rub has been tested and refined over many smoky sessions in my backyard. So, grab your spices, fire up the smoker, and let's get started!

Tips and Techniques

+

Applying a rub is just the first step in creating a delicious brisket. Here are some tips to help you get the best results:

+
    +
  • Dry the Brisket: Before applying the rub, make sure the brisket is dry. This helps the rub adhere better and form a nice crust.
  • +
  • Generous Coating: Don't be shy with the rub. Apply it generously to all sides of the brisket.
  • +
  • Resting Time: Let the brisket sit with the rub for at least an hour before smoking. This allows the flavors to penetrate the meat.
  • +
  • Smoking: Maintain a consistent temperature in your smoker. For brisket, a temperature of around 225°F (107°C) is ideal.
  • +
  • Patience: Brisket takes time. Plan for about 1 to 1.5 hours of smoking time per pound of meat.
