2 · The Maillard reaction — the star of the lesson — El tostado

The browning of chiles, seeds, and nuts in a dry pan is the Maillard +reaction: an amino acid and a reducing sugar, heated together, produce a +hundred-plus new flavor compounds. It is the same chemistry as the crust on a loaf +of bread — the same reason toast smells like breakfast.

But Maillard is a temperature window, not a destination. The takeaway that sticks: water is the enemy of browning. Until +surface moisture evaporates, the food stays stuck at 100 °C no matter how hot the +pan. That's why we toast dry, in a single layer, and why we stop +toasting before the seeds pop — the reaction is also the risk.
