A lesson I teach before the family holiday cooking — and the one my students remember longest. Toast slowly, measure exactly, taste often.
Mole poblano holds thirty-plus ingredients and yet it tastes like one thing. That is the same puzzle a well-balanced chemical equation solves: many inputs, one coherent product, and every variable doing its specific job. The mole (Q3319470) is a culinary speciality of Puebla, Mexico, part of Mexican cuisine — a dish my grandmother measured by feel. This lesson is the argument that "by feel" is a highly trained chemical intuition, and that we can name the reactions underneath it.
The browning of chiles, seeds, and nuts in a dry pan is the Maillard reaction: an amino acid and a reducing sugar, heated together, produce a hundred-plus new flavor compounds. It is the same chemistry as the crust on a loaf of bread — the same reason toast smells like breakfast.
But Maillard is a temperature window, not a destination. Below ~140 °C it crawls; between ~150 and 170 °C it blooms; past ~180 °C you leave the flavor window and slide toward caramelization, then acrid char. This is the single most useful transferable fact in the lesson — it explains why "low and slow" is not nostalgia but temperature control.

Every mole recipe is, algebraically, an expression for balance: heat (chiles), depth (seeds and nuts), aroma (spices), and richness (chocolate). Of those, chocolate is the variable added last and adjusted most — a small round of dark chocolate mellows bitterness, thickens body, and rounds the edges. It is the coefficient you tune after everything else has reacted, because its job is to balance the equation, not join it.
