<h2>1 · Framing the question <span class="es">— La pregunta</span></h2>
<p>Mole poblano holds thirty-plus ingredients and yet it tastes like <em>one</em>
thing. That is the same puzzle a well-balanced chemical equation solves: many
inputs, one coherent product, and every variable doing its specific job.
The <em>mole</em> (<a href="https://4ort.xyz/entity/mole-poblano">Q3319470</a>)
is a culinary speciality of <a href="https://4ort.xyz/entity/mole-poblano">Puebla, Mexico</a>,
part of <a href="https://4ort.xyz/entity/mole-poblano">Mexican cuisine</a> — a dish
my grandmother measured <em>by feel</em>. This lesson is the argument that "by feel"
is a highly trained chemical intuition, and that we can name the reactions underneath it.</p>

<h2>2 · The Maillard reaction — the star of the lesson <span class="es">— El tostado</span></h2>
<p>The browning of chiles, seeds, and nuts in a dry pan is the <strong>Maillard
reaction</strong>: an amino acid and a reducing sugar, heated together, produce a
hundred-plus new flavor compounds. It is the same chemistry as the crust on a loaf
of bread — the same reason toast smells like breakfast.</p>

<p>But Maillard is a <strong>temperature window, not a destination</strong>. Below
~140&nbsp;°C it crawls; between ~150 and 170&nbsp;°C it blooms; past ~180&nbsp;°C
you leave the flavor window and slide toward caramelization, then acrid char. This
is the single most useful transferable fact in the lesson — it explains why "low
and slow" is not nostalgia but <em>temperature control</em>.</p>
<h2>3 · Your turn — the temperature check <span class="es">— Tu turno</span></h2>
<p>In class I run a quick demo with a probe thermometer and a dry pan of sesame and
pepitas. This is the board I put on the screen. Type an oil temp in °C and watch
the pan "talk back."</p>

<p><strong>The takeaway that sticks:</strong> water is the enemy of browning. Until
surface moisture evaporates, the food stays stuck at 100&nbsp;°C no matter how hot the
pan. That's why we toast <em>dry</em>, in a single layer, and why we <em>stop</em>
toasting before the seeds pop — the reaction is also the risk. Low and slow gives the
complexity time to build without the char that masks it.</p>
<h2>4 · Chocolate as the adjustable variable <span class="es">— La variable ajustable</span></h2>
<p>Every mole recipe is, algebraically, an expression for <em>balance</em>: heat
(chiles), depth (seeds and nuts), aroma (spices), and richness (chocolate). Of those,
chocolate is the variable added <strong>last and adjusted most</strong> — a small
round of dark chocolate mellows bitterness, thickens body, and rounds the edges. It is
the coefficient you tune after everything else has reacted, because its job is to
<em>balance the equation</em>, not join it.</p>
