<p class="lede">I run two registers that never sleep: the cash drawer at close, and the ceviche bowl on the kitchen counter. Both punish the impatient. Both reward the exact count. These are my field notes on both.</p>
|
|
|
|
<p>I'm a cashier in San Antonio, which means my day is mostly arithmetic with strangers and my evening is mostly timing with acid. People assume those are unrelated. They're not. The lime that turns raw fish into ceviche is doing a chemical job, and so is the three-count at the end of my shift. Same habit of patience, different register.</p>

<h2>The register</h2>
|
|
<p>Discrepancies are not theft, most nights. They're crowding, distraction, and a count done once. My honest rule: cash is counted twice, under your own breath, before the drawer closes — once face up, once by denomination. A drawer that's off by two dollars at 11pm tells you more about the shift than the total ever did.</p>
|

<h2>La cocina — the lime question</h2>
|
|
<p>Ceviche is Peru's dish — UNESCO listed it as Intangible Cultural Heritage — and it is raw fish denatured by citrus juice, not "cooked" in heat. The mechanism is real chemistry: the acid in the lime (the limonene that carries its scent) and its acidity denature the muscle proteins, turning the flesh opaque the way heat would, only without any fire.</p>

<p>People argue about marinating time the way they argue about drawer policy. Fifteen minutes on small cubes of sea bass, then dress and serve cold. Any longer and the surface turns chalky — the fish "overcooks" in the acid. The window is the discipline.</p>

<p>Every register at close is a 0-sum game. What came in, what went out, what's left — and the difference is exactly the mistake I made at 6pm and forgot to fix.</p>
