<h2>1 · Framing the question <span class="es">— La pregunta</span></h2>
<p>Mole poblano holds thirty-plus ingredients and yet it tastes like <em>one</em>
thing. That is the same puzzle a well-balanced chemical equation solves: many
inputs, one coherent product, and every variable doing its specific job.
The <em>mole</em> (<a href="https://4ort.xyz/entity/mole-poblano">Q3319470</a>)
is a culinary speciality of <a href="https://4ort.xyz/entity/mole-poblano">Puebla, Mexico</a>,
part of <a href="https://4ort.xyz/entity/mole-poblano">Mexican cuisine</a> — a dish
my grandmother measured <em>by feel</em>. This lesson is the argument that "by feel"
is a highly trained chemical intuition, and that we can name the reactions underneath it.</p>
<div class="dual">
<div>Why does a mole taste <em>toasted</em> rather than merely cooked? What chemical
change are we chasing, and what do we have to control to get it right every time?</div>
<div class="es">¿Por qué un mole sabe a <em>tostado</em> y no simplemente a cocido?
¿Qué cambio químico buscamos y qué tenemos que controlar para lograrlo siempre?</div>
</div>
<h2>2 · The Maillard reaction — the star of the lesson <span class="es">— El tostado</span></h2>
<p>The browning of chiles, seeds, and nuts in a dry pan is the <strong>Maillard
reaction</strong>: an amino acid and a reducing sugar, heated together, produce a
hundred-plus new flavor compounds. It is the same chemistry as the crust on a loaf
of bread — the same reason toast smells like breakfast.</p>
<figure>
<img src="https://images.pexels.com/photos/3997309/pexels-photo-3997309.png?auto=compress&cs=tinysrgb&dpr=2&h=650&w=940"
alt="Golden brown toast — the Maillard reaction in action"/>
<figcaption>Toast is the easiest, cheapest Maillard demo in the house: dry heat,
an amino acid plus a sugar, and a crisp golden crust of new flavor compounds.</figcaption>
</figure>
<p>But Maillard is a <strong>temperature window, not a destination</strong>. Below
~140&nbsp;°C it crawls; between ~150 and 170&nbsp;°C it blooms; past ~180&nbsp;°C
you leave the flavor window and slide toward caramelization, then acrid char. This
is the single most useful transferable fact in the lesson — it explains why "low
and slow" is not nostalgia but <em>temperature control</em>.</p>
<h2>3 · Your turn — the temperature check <span class="es">— Tu turno</span></h2>
<p>In class I run a quick demo with a probe thermometer and a dry pan of sesame and
pepitas. This is the board I put on the screen. Type an oil temp in °C and watch
the pan "talk back."</p>
<div class="timer">
<h3>/// PAN CHECK — TIEMPO DE TOSTADO</h3>
<p class="tdesc">Enter the pan surface temperature (°C) and read the reaction state.</p>
<label for="temp">Surface °C</label>
<input id="temp" type="number" value="155" min="80" max="220" step="1"/>
<button id="check" style="background:var(--moss);color:#f6efe2;border:none;
font-family:inherit;font-size:14px;padding:7px 16px;border-radius:4px;
margin-left:10px;cursor:pointer">Check / Revisa</button>
<div id="out" class="readout">Waiting for a temperature…</div>
</div>
<p><strong>The takeaway that sticks:</strong> water is the enemy of browning. Until
surface moisture evaporates, the food stays stuck at 100&nbsp;°C no matter how hot the
pan. That's why we toast <em>dry</em>, in a single layer, and why we <em>stop</em>
toasting before the seeds pop — the reaction is also the risk. Low and slow gives the
complexity time to build without the char that masks it.</p>
<h2>4 · Chocolate as the adjustable variable <span class="es">— La variable ajustable</span></h2>
<p>Every mole recipe is, algebraically, an expression for <em>balance</em>: heat
(chiles), depth (seeds and nuts), aroma (spices), and richness (chocolate). Of those,
chocolate is the variable added <strong>last and adjusted most</strong> — a small
round of dark chocolate mellows bitterness, thickens body, and rounds the edges. It is
the coefficient you tune after everything else has reacted, because its job is to
<em>balance the equation</em>, not join it.</p>
<table>
<tr><th>Role</th><th>Ingredient family</th><th>What to control</th></tr>
<tr><td>Heat / picor</td><td>Dried chiles (ancho, mulato, pasilla)</td><td>Variety and soak time</td></tr>
<tr><td>Depth / fondo</td><td>Toasted seeds and nuts</td><td>Pan temperature, single layer</td></tr>
<tr><td>Aroma / aroma</td><td>Spices, garlic, onion</td><td>Toast order, rest time</td></tr>
<tr><td>Balance / balance</td><td>Chocolate</td><td><em>Adjusted last, in small increments</em></td></tr>
</table>
<div class="dual">
<div>Encourage students to write the mole as an equation: <em>Chiles + Seeds/Nuts +
Spices + Chocolate → Mole</em>, then ask: which coefficient do you tune when it's
too bitter? Too thin? Too flat?</div>
<div class="es">Pide a los estudiantes que escriban el mole como ecuación:
<em>Chiles + Semillas/Frutos + Especias + Chocolate → Mole</em>. ¿Qué coeficiente
ajustas si está muy amargo, muy aguado o muy soso?</div>
</div>
<h2>5 · Exit ticket — show what changed <span class="es">— Boleto de salida</span></h2>
<ul class="tight">
<li><strong>Name the reaction</strong> responsible for the toasted flavor, and give
its two reactants.</li>
<li><strong>Explain why "low and slow"</strong> is a statement about reactions, not
about tradition.</li>
<li><strong>Predict</strong>: if you toast sesame at 200&nbsp;°C, what do you
expect to taste — and why does it differ from 160&nbsp;°C?</li>
</ul>
<figure>
<img src="https://images.pexels.com/photos/14043699/pexels-photo-14043699.jpeg?auto=compress&cs=tinysrgb&dpr=2&h=650&w=940"
alt="Toasting in a pan on the stove"/>
<figcaption>Dry heat, a single layer, and the probe thermometer within reach. This
is the whole discipline — and it transfers straight to teaching.</figcaption>
</figure>
<h2>Extend the lesson</h2>
<p>Watch my short film <a href="/films/mole-algebra/index.html">Mole as Algebra</a>
— the same story told as a visual: the chemistry of toasting, chocolate as the
last-adjustable variable. Field notes on the table above are grounded in Wikidata
(<a href="https://4ort.xyz/entity/mole-poblano">mole poblano · Q3319470</a>).</p>
